Side Dish

 Avial

Ingredients

coconut -1 cup

cumin - 1 tbsp

green chillies - 3-4

Grind them together

vegies:

    potato 

    drumstick

    beans

    carrot

    cucumber

    plantain

    or any of choice

curry leaves

turmaric

Procedure:

* Coconut masala - Grind the coconut, cumin and green chilles

* Add water and boil vegies of choice  for 5 mins.

* Add the coconut masala and boil for 5 -10 min

* Add coconut oil and curry leaves

* Add yogurt and mix well

* Garnish with mustard seeds, urad dal, red chillies, curry leaves and hing


Tiffin Recipe

 Adai

ingredients: 

idli rice  - 3/4cup

lentils :

   channa dal -1/4 cup

   moong dal -1/4 cup

   urad dal - 1/4 cup

tamarind - little small size

red chilli - 10-15  (spice level)

salt - to tast


Procedure:

* Soak the ingredients for about 4 - 5 hours or over night and grind to coarse / rava consistency adding red chilles, salt and tamarind.

Oota kommulu

 Oota Kommulu

Ingredients:

Kommulu  -  1-3 kgs

Curd/Yogurt - 2-3 cups

Rock salt - fist full

Mustard seeds - 1 Tbsp

Dried red chillies - 2 cups full 

Turmeric  -  1 tbsp


Procedure.

This is a type of pickle and goes good with curd rice or upma recipes as side dish.

It has various steps to follow.

step 1 :

Kommulu s a kind of root stems like ginger variety .

Clean them well and soak them in water for over night.

Remove the skin and cut into pieces.

Dry them well it should not have moist.

Put them in container and add rock salt to it and mix well.

step 2: 

Grind Red Chilles , turmeric powder and mustard seeds fine powder. 

Step 3 :

Make the curd to buttermilk and mix the powder .

Add it in to the salted kommulu and mix well.

Step 4:

Mix them every day ones or twice  for 2  or 3 days. 

Step 5:

Taste it and can add salt or spiciness to your individual choice.

Refrigerate it .

Note : Once the kommulu gets soaked well the the bitterness will get reduced.

The spicy liquid can be added to other vegies like wing beans,  broad beans, long  beans etc.,

Once added to Cabbage or Cauliflower , Try to add them separately and not mix with the already prepared one.

Festival and Pooja Procedures:

Nagula Churthi:

Prasadh / Nevedhyam :

Sprouted moong 
    Procedure : soak green sprouts for 1 whole day.
    Filter water and keep in dark place or on hotpot or casserole or cooker unheated
    You see the sprouts. 
 Roasted channa (chenagapppu) laddu :
   chenuga pappu - 1 cup
   sugar 1 cup
   Melted Ghee
   Powder roasted channa and sugar 
   Procedure : Melt the ghee and make them laddu
Chimbili :
    Sesame seeds 
    Jagree
    Procedure : Clean sesame seeds , jagree and Grind both sesame and jagree and make the laddus

Navapazham / Jamuns if available
  
note : Prefer buying brown sesame seeds

Celebrate the festival with different kids of fruits and coconut .

Idea : Made my kids draw an image of snake and decorate it.

Thoranam :
Apply Turmaric to thread with 9 stings for adults and 5 knots little kids
Count with the people in the family and one for God.

Idli
kolukattu 
- outer layer rice flour cooked with little salt ,oil and water
Stuffing :
   - mix grated coconut and sugar over heat and  mix well.
   - make sure it comes to sticky consistency

Steam kotlukattu 

Thalika la papravannam :

Make little balls with the outer layer of kolu kattu
 and steam it.
Mix it with milk and sugar / jagree

Uddunta 
Soak thuvar dal over night  and grind with red chillis, salt and a piece of coconut
pour in to idli plate and steam it.

Idli 

Note : Stuffing to kolukattu can be made few day earlier even Thoram and Korjanjam can be prepared ahead.

Celebrate the pooja count of 9 turmaric stems, 9 betel leaves , fruits including all prasad 9 counts.

This day is celebrated a day before Varalaxmi Vratham.

In Indian houses clean the every entrance of house door with turmeric and apply kumkum dots.
Clean the photo frames and apply turmeric and kunkum.

RathaSaptami:

Ratha sapthami festival is celebrated after pongal festival around feb or march.
Its concidered as birthday of Sun God.

Place a picture of Ratham or in some places they make Ratham template with  beans leaves and tooth picks.
Make Ratham template on beans.

 Polala amavasya
Decorate Godess parvathi as little a baby in the house and its daily celebrated for kids buying new dresses or toys to kids.  
we make thororam , 9 knots turmeric thread for all kids and ladies at home.
Prasadam:
Thalikala paramannam
billa kudumulu 
idli
arrangement :
Make turmeric Ganesha and place it on betel leaves
Thorum : 9 string turmeric thread with 9 knots 

 
Billa kudumulu 
     rice flour 1 cup
     water 1 cup
     oil -1 tsp
     salt to taste
    soak channa dal - 2 tsp
    soak moong dal - 2 tsp
    grated coconut 1 tsp
 procedure :
In a think bottom kauai add water , oil, salt , channa, moong dal and coconut.
When water starts to boil add rice flour and mix after 10 mins
Then switch off the flame and transfer to other bowl /plate
when it cools down , drizzle some oil and some dough ,
knead it throughly.
Then divide the dough into equal portions and make lemon size balls and steam it like idli plates.
This recipe is mainly done on polalamavasa
Please note : Make kolukattu outer and mix the soaked channa and moong and mix with the boiled . Steam them with small flattened balls.
Thalikala paramannam:
Make Thalikkalu , The procedure is similar to kolukaatu outer layer. 
Make them into balls or strings and to youe choice ans steam them.
Boil milk and add sugar / jagree and boil well and when it starts to bubble add the steamed Thalikalu.
Mix well add or nuts powder to add healthy choice.  

Gowri Vratham is usually celebrated the day before Ganesha Chathurthi and we celebrate both on the same day.
On this day we make idol of lord gowri Devi .
we place little turmeric Ganesha on betel leaves.
Make and Decorate Ganesha made with earth clay , and make little hat to Ganesha.

Prasadam:
betel leaves and pan nuts - 16 counts
coconut /roasted sesame seeds kolukattu -16
Thoram: 16 string turmeric thead with 16 knots
korjanjum : Cotton garland to lords Ganesha and Gowri devi 
uddunta:
   Thuvar dal soaked over night or 2 hrs grind with red chillies, turmaric, salt, cumin seeds.
   Pour it on idli plate and stem it 10 mins
Kolukattu:
   outer layer:
   rice flour -1 cup
   oil
   water -1 cup
   salt - to taste  
   Boil water and add oil. when it bubbles add rice flour and mix after 10 mins
   Then later make it to dough.
  Inner stuffing:
   coconut and mix with sugar over low flame.
   can be prepared a day or 2  before
thali kala paramannam :
Made with outer layer of kolukattu.
Make balls and steam them .
Boil milk 
Mix with jagree / sugar  and steamed balls 
undrallu - optional
some times when making the kolu kattu the outer filler with be left out and at that time we can make these undrallu

Polalamavasy celebrated on new moon day before Ganesh chathurthi.
