Pani Puri

Pani Puri/ Masala puri :

Puris:

Ingredients:

Fine Soji - 3/4 cup
All purpose flour (Maida) - 1/4 cup
Water - 1/2 cup

Mix all the above and keep aside for 10 min covered with wet towel.
Make little balls and press .
This makes nearly 60 puris.

Pani :

Mint leaves - 1 cup
green chillies - 4
tamarind pulp - 3 tbsp
lemon juice - 1 tbsp
Cumin powder - 1 tsp
black pepper - 1/2 tsp
salt
dry chilli powder - 1/4tsp
black salt - 1 tsp
asafotida - a pinch
sugar

Grind together and strain .

Masala :

Fennel seeds - 1 tbsp
Cinnamon - 2tsp
ginger - a small piece
Red chilli powder
onion
garlic
salt
mint
coriander leaves
boiled potato, peas.

Grind together Fennel seeds, cinnamon, ginger , red chilli powder, little onion boiled green peas, and potatoes with mint leaves and coriander leaves.
Saute the pan with little oil and fry with left onions, peas ,potato and mix with the above paste and add more water.

Serve with puris and mix with the above masala with sprinkled sev, yougurt, boondi.
