Brinjal - 1/4 kg
oil
small onions -6
corriander seeds- 2 Tbsp
sasame seeds-2 Tbsp
Poppy seeds- 1Tbsp
Fried Pea nuts-1Tbsp
Ginger-1 piece
Garlic-6 pods
salt-to taste
Coconut- 1 Tbsp
Chilli Powder-2 Tbsp
Turmaric Powder-1/4 tsp
Method:
--> Dry roast separately sasame seeds, Poppy seeds, Pea nuts, Corriander seeds
-->Cool and Powder it
-->Grind Ginger, garlic, small onions, grated coconut, salt, turmaric powder, and chilli powder to paste.
-->cut brinjal in to 2 from the top with out separating the bottom.Turn and cut from the bottom with out top.Place the stuffing in all the brinjals . keep the remaining masala paste aside.
-->Heat oil in the kadai add the stuffed brinjals and the remaining masala apste .Lower the flame and cook covered for 5 to 1o mins . Remove the lid and increase the flame .Cook till done.
-->goes good with Rice and chapatis....
